Does this scenario sound familiar? You are running out the door trying to get to work on time and you forgot to grab something to eat. There isn’t enough time to pick up a decent meal for breakfast so you settle for a muffin or perhaps just a coffee to get you through until lunch time.
Avoid the morning scramble (pun intended) and try out these different options for portable eggs:
Hard boiled: Prepare a batch the night before, peel them and store in an air-tight container. Season with salt and pepper.
Quiche/frittata: Bake a quiche or frittata (crustless quiche) on the weekend and have a portable slice every morning of the week. Pack it with your favourite veggies and seasonings to add variety.
Muffin cups: This is essentially the same concept as a frittata but mini! Easily one of the most convenient ways to bring eggs with you wherever you go. Toss them in the microwave before eating.
Poached: Crack an egg in a microwave safe mug or bowl and add ½ cup of water and 1 tbsp white vinegar to it. Cover the mug and cook on high for approximately 1 minute. Use a spoon to check if the egg white has set and once it has, enjoy!
