Zucchini Lasagna

Some people think it's silly that I'm on Twitter. I suppose they'd be right if I mostly followed fluff, which is entertaining but not very useful. However, the bulk of those I follow are healthcare professionals and foodies which has allowed me to pick up some great tips. Case in point: the following recipe. It came from a simple tweet suggesting that one replace lasagna noodles with strips of zucchini as a way to save calories and increase vegetable intake.

Brilliant!

We gave it a try the other night and it turned out well except there was a lot of excess moisture (from the zucchini and frozen spinach presumably). So our plan next time is to bake the zucchini for a few minutes before we layer it and use fresh instead of frozen spinach.

Ingredients

427g red (or yellow or green) peppers

122g onion

124g mushrooms

955g zucchini

1 ½ cups pasta sauce (low sodium is best)

300g extra lean ground beef

300g spinach

1 cup fat-free cottage cheese

120g reduced fat (approx 20% milk fat) cheddar cheese

Directions

  1. Cook beef in a non-stick frying pan over medium heat until mostly done.

  2. In a separate non-stick pan, add peppers, onion, mushroom and cook over medium heat until they begin to soften.

  3. When beef and vegetables are ready, combine into one pan over low heat.

  4. Spread sauce over the bottom of a baking dish.

  5. Cut zucchini into length-wise strips (pictured) and layer in dish (can bake for 5-10 minutes prior, if desired).

  6. Add thin layer of sauce.

  7. Add ½ frying pan mixture.

  8. Add thin layer of sauce.

  9. Add layer of zucchini.

  10. Add thin layer of sauce

  11. Top with spinach and cottage cheese.

  12. Add remaining frying pan mixture.

  13. Add thin layer of sauce

  14. Sprinkle with cheese.

  15. Bake at 350 F for 60-80 minutes. Optional:at the end, place under broiler for ~5 minutes to crisp cheese.

Makes 8 servings (great for leftovers!)
