Avocado Chocolate Brownies

I believe this is my first dessert "recipe of the month!"

Important note, no matter how you alter a dessert e.g. reducing sugar, substituting sugar, substituting fats, increasing protein, etc., it is still a dessert; there is no such thing as a "healthy dessert."  That said with some tweaks you can certainly make a less caloric/sugar dense and more satiating/filling indulgence, which can indeed prove helpful.

Ingredients (~ 9 servings)

1 large ripe avocado

2 eggs

2 tsp vanilla

100g dark chocolate or semi sweet baking chocolate

1 heaping cup cocoa powder

1/3 cup sugar

1 banana

1/2 tsp baking soda
1/4 tsp of salt

 

  • Preheat your oven to 350F

  • Line an 6-8" square cake pan with parchment paper.

  • In a food processor, puree your avocado and banana with your eggs and vanilla until smooth.

  • Melt your chocolate in the microwave and mix with your avocado mixture in the food processor.

  • Add in your sugar, cocoa, baking soda and salt and mix.

  • If too thick to scoop, add 1 tbsp or so of water.

  • Scoop your mixture into your pan, spread out evenly.

  • Bake for ~25-30 minutes or until a toothpick inserted comes out clean.

  • Done! Cool in fridge for ~30 min. for best results

Will last in the fridge for a 4-5 days but best to freeze extras and pull in portions needed.
