Cauliflower Bites

Looking for an easy, delicious way to include more vegetables in your diet? Try these healthy, easy to make cauliflower bites. This is one of our favourite recipes because it is so versatile. These cauliflower bites are a great make ahead, after school snack for kids or a tasty side dish for any meal. You can also pair them with your favourite dip and serve them as an appetizer at a weekend BBQ or alongside your eggs in the morning for breakfast.

Cauliflower bites

Servings: makes 24

Nutrition Information per Serving: Calories: 90; Protein: 5g; Carbohydrate: 14g; Fat 2g; Fibre 2g, Sodium 98mg

Ingredients:

  • 1 head of cauliflower, grated
  • 2 eggs, whisked
  • 2/3 cup panko breadcrumbs
  • 1/3 cup diced onion
  • 1 tsp garlic powder
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 1 cups grated, sharp cheddar cheese

Instructions: 

  1. Pre-heat oven to 400 F and grease a mini muffin-tin (you can also form into “bites yourself and place on a greased baking sheet)
  2. Mix all ingredients in a medium sized bowl.
  3. Add 1 tbsp of mixture to each mini muffin cup and press down firmly
  4. Bake at 400 F for 18-20 minutes, until golden brown on top.
  5. Enjoy!
