Serves 4- Makes 8 skewers or kebabs

  • 1-2 pounds skinless salmon filets, cut into 1 inch pieces/cubes
  • 2 tbsp fresh herbs of your choice (oregano, basil, parsley or cilantro)
  • 2 tsp sesame seeds
  • 1 tsp cumin
  • ¼ tsp crushed red pepper flakes or hot sauce like sriracha
  • 2 lemons, thinly sliced into rounds
  • 1 tsp salt
  • 16 bamboo skewers* soaked in water or reusable metal skewers
  • Olive oil or cooking spray

Heat grill on medium heat, spray or brush grate with oil. Mix herbs, sesame seed, cumin and red pepper flakes (or hot sauce) in small bowl, set mixture aside. Thread salmon and folded lemon slices onto 8 pairs of parallel skewers. Lightly coat the fish with some oil, salt and the spice mixture. Cook on grill until fish is opaque throughout, turning occasionally, about 8-10 minutes total.
