Kitchen Sink Frittata

It would be hard to find an easier dish to throw together when short on time and groceries then a tasty frittata. As long as you have eggs, any type of cheese, and any vegetable fresh or frozen you're good to go. In the example below I used aged cheddar, tomatoes, bell peppers I had left over from the weekend and some frozen spinach that was hanging around in the freezer.   

 

Ingredients (serves 6)

  • 12 eggs

  • 2 bell peppers

  • 1 onion

  • 2 cups spinach frozen

  • 2 tomatoes

  • 1 tsp salt

  • 1 tsp pepper

  • 2 tbsp olive oil

  • 6 oz aged cheddar


 

  1. Turn oven to ~350F. Saute the onion with olive oil in a frying pan on low heat for ~8 minutes.

  2. Throw the bell peppers in the frying pan and saute for an additional 5 min.

  3. Add frozen spinach into frying pan and cook an additional 3 min.

  4. combine eggs, salt, pepper and whisk for ~2 minutes.

  5. In a ~10 inch baking dish, place the ingredients from the frying pan and line the bottom, layer the cheese on top of this, then pour in the whisked eggs.

  6. Finally, layer the sliced tomatoes on top

  7. Bake for ~25-30 minutes.

  8. Enjoy!
