Mediterranean Lentil Quinoa Salad

This salad is so great because it can be used as a tasty, make ahead lunch or you can serve it alongside chicken or salmon on the BBQ for dinner. Because it is so quick and easy to make this is also a great, healthy option for a pot luck. Give it a try and let us know what you think.


2 cans lentils, drained and rinsed (about 4 cups)

1 cup quinoa, uncooked

1 small red onion, diced

1 large cucumber, sliced and quartered

1 pint grape tomatoes, halved

1 cup parsley, chopped

6 oz feta cheese, diced or crumbled



½ cup plain Greek yogurt

1 tbsp olive oil

2 cloves garlic, minced

1 tsp dried oregano

Zest of one lemon

Juice from ½ lemon



  1. Cook quinoa according to the directions on the package and let cool.
  2. In a large container combine lentils, quinoa, red onion, grape tomatoes, cucumber, feta cheese and parsley. Set aside
  3. In a small bowl combine the Greek yogurt, olive oil, garlic, oregano, lemon zest and lemon juice and mix well. Pour the dressing over the salad ingredients and stir to coat.
  4. Store in the refrigerator.
