Pea, feta and mint salad

Pea, feta and mint salad

Sugar snap and snow peas are now in season in Ontario and fresh green peas will be coming soon!  These little green gems are delicious on their own or mix them all together in this fresh, nutritious salad. To go with the green vegetable theme, you could also add some edamame beans for some extra protein and fibre.  


Serves 6

Nutrition info per serving: 225 calories; 16g fat; 12g carb, 5 g fibre, 8 g protein



200g green peas (fresh or frozen)

200g sugar snap peas

200g snow peas

1 cups mint leaves

3 cups spinach (or other mixed green)

200g feta cheese, drained



1 garlic clove

2 tbsp lemon juice

1 tbsp red wine vinegar

1 teaspoon honey

4 tbsp extra virgin olive oil

Salt and pepper to taste


Mix dressing ingredients together in small bowl or jar. Combine salad ingredients in a larger bowl and toss with dressing before serving. Store any leftovers in the fridge. Serve alongside grilled fish or chicken and a piece of crusty whole grain bread for a great summertime meal.
