
Need a quick protein option that comes together in 30 minutes or less? This zesty tomato halibut might be just what you've been looking for.

 ππ§π π«πππ’ππ§ππ¬:
 2 Tbsp + 1 Tbsp extra-virgin olive oil
 4 6 oz. skinless halibut fillets
 2 cloves garlic, sliced
 2 anchovy fillets (optional)
 1 pint cherry tomatoes, diced
 1 lemon, zested and cut in half
 2 Tbsp flat-leaf parsley leaves
 ΒΌ tsp kosher salt
 Freshly ground black pepper to taste
 
ππ’π«ππππ’π¨π§π¬:
 1. Heat 2 Tbsp of the oil in a large pan over medium-high heat until shimmering hot. SautΓ© the fish, turning once, until lightly browned and cooked through, 2-3 minutes per side. Remove from the pan.
 2. Add the remaining 1 Tbsp of oil with the garlic, anchovies, and tomatoes. Cook, stirring often, for 1 minute.
 3. Stir in the lemon zest and parsley. Season with the salt and pepper. Spoon over the fish. Serve with the lemon.
