Hummus is an incredibly versatile food. It can be used as a dip or a spread, and is equally tasty in a wrap or as creamy dressing for vegetables. Most of us think of hummus as something that must be purchased pre-made at the grocery store. While there's nothing wrong with that, making hummus from scratch is easier than you might think. Here's how:

- 2 cans chickpeas
- 1 clove garlic
- 2-3 tablespoons olive oil
- up to Β½ cup water
- up to 1/2 teaspoon salt
- tahini and/or lemon juice (start with a tablespoon of each)

1. Rinse and drain your chickpeas thoroughly.
2. Add your chickpeas, olive oil, garlic, salt, and water to a food processor or high speed blender. You can add lemon juice and tahini for a more authentically flavored hummus if desired.
3. Process until smooth.
Never heard of tahini? Tahini is a paste made from finely ground sesame seeds. Most grocery stores carry it - just ask!
If a smoother hummus is desired, try gently squeezing the chickpeas and removing the thin skin before putting them in the food processor.
